Whole30 Irish Nachos with Chorizo, Olives, Tomatoes & Avocado
Ingredients:
16 Mini Potatoes (more or less depending on the size of your pan)
2 tbsp. Olive Oil
Salt & Pepper
1 Spicy Chorizo Sausage Link (read your labels)
Black Olives, slices
Cherry Tomatoes, chopped
Avocado, sliced
Cilantro, chopped
Limes
Paleo Sour Cream
Instructions:
- Preheat your oven to 400Β° F
- In a bowl, toss your potatoes with the olive oil and season with salt and pepper
- Bake for 50-60 minutes, rotating half way thought, or until golden and fork-tender
- When your potatoes are almost done, in a non-stick pan or skillet, cook your sausage
- Once your potatoes are done, remove your pan from the oven and top with chorizo, sliced black olives, chopped cherry tomatoes, sliced avocado and cilantro
- Serve with lime wedges and paleo sour cream
If you are not whole30 or paleo, top with chorizo then cheese, place under the broiler for a couple of minutes, then remove and finish with the other toppings!
