It's usually healthy, generally paleo-ish, sometimes Whole30. I will never be able to live without good cheese!

Roasted Bone-In Pork Chop with Autumn Glory Apples & Pears

Ingredients:
1 Bone in Pork Chop at least 1” thick, room temperature
1 Autumn Glory Apple, cored and sliced into wedges
1 Bartlett Pear, cored and sliced into wedges
3 tbsp. Olive Oil, divided
Fresh Rosemary, chopped
Fresh Thyme, chopped
Salt & Pepper

Instructions:

  1. Preheat oven to 400Β° F
  2. Toss apple and pear slices with 1 tbsp. olive oil, chopped rosemary, chopped thyme, and salt in a large bowl. Adjust your herbs and salt to taste
  3. Set apple and pear slices aside
  4. Pat pork chop dry and season with salt and pepper
  5. In an oven safe pan, heat 2 tbsp. olive oil until it’s searing hot and slightly smoking
  6. Sear pork chops until crust forms, about 3 minutes per side
  7. Turn the flame off and add apple and pear slices to pan
  8. Immediately place in the oven and bake for 6-10 minutes, or until the internal temperature reaches 140Β°F. This will vary depending on the thickness of your pork chops
  9. Remove from oven, tent loosely with foil, and let rest for 5-10 minutes. The internal temperature needs to rise to 145Β°
