Roasted Bone-In Pork Chop with Autumn Glory Apples & Pears
Ingredients:
1 Bone in Pork Chop at least 1β thick, room temperature
1 Autumn Glory Apple, cored and sliced into wedges
1 Bartlett Pear, cored and sliced into wedges
3 tbsp. Olive Oil, divided
Fresh Rosemary, chopped
Fresh Thyme, chopped
Salt & Pepper
Instructions:
- Preheat oven to 400Β° F
- Toss apple and pear slices with 1 tbsp. olive oil, chopped rosemary, chopped thyme, and salt in a large bowl. Adjust your herbs and salt to taste
- Set apple and pear slices aside
- Pat pork chop dry and season with salt and pepper
- In an oven safe pan, heat 2 tbsp. olive oil until itβs searing hot and slightly smoking
- Sear pork chops until crust forms, about 3 minutes per side
- Turn the flame off and add apple and pear slices to pan
- Immediately place in the oven and bake for 6-10 minutes, or until the internal temperature reaches 140Β°F. This will vary depending on the thickness of your pork chops
- Remove from oven, tent loosely with foil, and let rest for 5-10 minutes. The internal temperature needs to rise to 145Β°
