Buffalo Bolognese with Spaghetti Squash
Ingredients:
2 tbsp. Olive Oil
4 Large Garlic Cloves, chopped
1 lb. Ground Buffalo (You can also use beef or bison)
1 24oz. Jar Tomato Sauce (read your labels for Whole30
Oregano, Basil, or Crushed Red Pepper (optional)
Salt & Pepper
1 Spaghetti Squash
Olive Oil
Fresh Basil for serving
Instructions:
For the Sauce:
- Line a plate with paper towel
- Heat EVO in a pan over medium heat
- Add garlic and cook until fragrant
- Add buffalo, season with salt and pepper, and sautΓ© until almost cooked through
- Using a slotted spoon, remove buffalo from pan to paper towel lined plate
- Drain liquid from pan
- Add sauce to the pan
- Season sauce to your taste
- Add Buffalo to pan
- Let simmer for 10-15 minutes until meat is cooked through
For The Spaghetti Squash:
- Preheat your oven to 400 degrees
- Slice your squash in half crosswise
- Scoop out the seeds
- Drizzle with Olive oil
- Sprinkle with salt and pepper
- Place cut side down on a parchment lined baking sheet
- Bake for 45-60 minutes, or until fork tender
- Set aside until cool enough to handle
