Soft Boiled Eggs & Asparagus Wrapped in Prosciutto
Ingredients:
2 Large Eggs
8 Asparagus Spears
4 Slices of Prosciutto
Olive Oil
Instructions:
- Preheat your oven to 450°F
- Line a baking sheet with parchment paper
- Cut off the woody ends of your asparagus, and discard
- Wrap each piece of asparagus in half a piece of prosciutto
- Lay them individually on the baking sheet
- Drizzle a little olive oil over the pieces
- Bake for 10 minutes
- Now it’s time to make your eggs.
- Bring a large pot of water to a boil
- Gently lower your eggs into the water with a slotted spoon
- Reduce heat to a simmer and cook for 6 Minutes
- Remove from water with a slotted spoon
- Cut off the tops and serve with asparagus
