It's usually healthy, generally paleo-ish, sometimes Whole30. I will never be able to live without good cheese!

Skirt Steak with Grilled Scallions & Chili Lime Salt

Skirt Steak with Grilled Scallions & Chili Lime Salt

Ingredients:
2 Grapefruits, juiced
4 Limes, juiced
2 Jalapenos, seeded
2 Tbsp. Olive Oil
10 Garlic Cloves
1 Cup Mango Chunks
Salt & Pepper
2 lbs. Skirt Steak
1 Bunch Scallions
Olive Oil
1/3 Cup Sea Salt
¼ Cup Lime Zest
Crushed Red Pepper (optional)

Instructions:

  1. Season your skirt steak with salt and pepper and set aside while you made your marinade
  2. Combine your grapefruit juice, lime juice, jalapeños, olive oil, garlic cloves, and mango chunks in a blender or food processor and pulse until smooth
  3. Reserve ¼ of marinade in a separate container
  4. In a large plastic container cover steak with remaining marinade, cover, and refrigerate for 1-2 hours
  5. Now is the time to make your lime salt. Combine your lime zest, sea salt, and crushed red pepper in the bowl of a food processor, and pulse until combined
  6. Oil half of the grill and heat it 
  7. Remove the steak from the marinade and place on the grill
  8. Baste with reserved marinade as needed
  9. Cook for 5 minutes on the first side then flip. You want the steak to be 135°F when you insert a meant thermometer, so you’ll cook it for another 3-5 minutes
  10. Remove from the grill and let it rest for 10 minutes
  11. Coat your scallions with olive oil and put them on clean side of the grill
  12. Lay them on the grill until grill marks appear (1-2 minutes), then flip them and cook them for an equal amount of time
  13. Serve your steak with scallions and season with your lime chili salt!
