Bacon Lattice with Fried Eggs & Avocado
Ingredients:
8oz. package of Paleo Bacon
Large Eggs
Ghee
1 Avocado, sliced
Salt, Pepper, Aleppo Pepper
Roast Your Bacon
- Preheat your oven to 425°F
- Line a baking sheet with tinfoil
- Make a lattice with your bacon
- Place in oven and roast for 25 minutes
- Line a plate with paper towels
- Remove from the oven and move your bacon to the paper towel lined plate
Fry Your Eggs:
- Crack your eggs into ramekins
- Place large non-stick skillet over medium heat
- Add the ghee, and evenly coat the surface of the pan
- Add your eggs into the pan
- Do not touch your egg, let it cook for a few minutes until the whites set
- Now, loosely cover your pan and lower your heat. The steam is going to finish setting your eggs
- Check them in 3-4 minutes
- As your eggs are done, slide onto your platter
Assemble:
Place the bacon lattice on a platter, top with eggs and sliced avocado. Season with salt, black pepper and/or aleppo pepper.
