Smoked Salmon & Chive Soft Scrambled Eggs

Smoked Salmon & Chive Soft Scrambled Eggs

Ingredients:
For The Eggs:

4 Large Eggs
½ Cup Roughly Chopped Smoked Salmon, plus more for serving
1 Heaping tbsp. Chopped Chives, plus more for serving
Salt & Pepper
1 Tbsp. Ghee

For The Salad:
Marinated Onions From NoCrumbsLeft:
1 small red onion
¾ cup olive oil
1 Tbsp. dried oregano
1 Tbsp. red wine vinegar
Arugula
Avocado, sliced into chucks

Instructions:
For The Eggs:

In a medium bowl whisk the eggs until they are pale yellow and completely incorporated. The smoked salmon is going to make this dish salty, but if you want a bit more salt, add it to the eggs at this point. Add your smoked salmon and chopped chives and whisk again to combine. Heat ghee in a non-stick skillet over medium-low heat. Add eggs and let them cook undisturbed until you can see a thin layer of cooked eggs around the edge of the pan.  Using a spatula,  push eggs around the pan until fluffy and barely set. Remove from the pan immediately and place on the plate.

For The Marinated Onions:
Thinly slice the red onion and place in a low bowl. In a separate bowl, stir the olive oil, red wine vinegar and dried oregano together to combine well. Pour the mixture over the onions, making sure they are submerged. Let sit on counter at room temperature to marinate for at least an hour. Keeps for two days unrefrigerated.

Assembly:
Top soft scramble with one sliced of smoked salmon and more chopped chives. Add arugula to your plate and top that with avocado and marinated onions.
