It's usually healthy, generally paleo-ish, sometimes Whole30. I will never be able to live without good cheese!

Whole30 Everything "Bagel" Purple Sweet Potato Bowl

Whole30 Everything "Bagel" Purple Sweet Potato Bowl

Ingredients:
1 Medium Purple Sweet Potato
Extra Virgin Olive Oil
1-2 Large Eggs
2 Tbsp. Distilled White Vinegar
1 Tbsp. Sea Salt
Ice for an Eggy Ice Bath
Salt & Pepper
Smoked Salmon Slices
Avocado Slices
Trader Joe's Everything Bagel Seasoning
Chives, chopped

Instructions:
Preheat your oven to 350Β°F, rub your purple sweet potato with extra virgin olive oil, wrap it in tinfoil and place it on a small baking sheet. Bake for 1-2 hours or until fork tender. Remove from the oven and set aside.

Now, add the distilled vinegar and salt to a medium pot of cold water and bring to a boil. Add your eggs and cook for six minutes (leave in longer for a less runny yolk). While your eggs are cooking, prep your ice bath. Remove your eggs from the pot and place in an ice bath for 5 minutes. Peel eggs and set them aside. 

Once your potato is cool enough to handle, slice the potato in half and scoop out the inside and place it in a bowl. Cut your egg(s) in half and place on top of the sweet potato. Add smoked salmon slices and avocado slices. Sprinkle with Trader Joe's everything bagel seasoning and chives!
